Outback Steakhouse Alice Springs Chicken and Dipping Sauce

 Have you ever went to Outback and ordered the Alice Springs Chicken entree?  Well, it is the ONLY thing I have ever had on my few outings down under, and I found myself craving it one night.  So I decided to try my own version---And IT WAS SO GOOD!!!

Brown 4-6 boneless skinless chicken breasts in a frying pan sprayed with cooking spray.  Season with lemon pepper, garlic salt, or whatever you like.  Put browned chicken breasts in a baking dish (I used a 9X13 glass dish lined with tin foil so I wouldn't have to wash it).  Meanwhile in the same frying pan, fry strips on bacon (about one per chicken breast) and set aside.  If bacon was really greasy, pour out most of the grease, then use a little left in the pan to fry 1 cup sliced mushrooms.  (I used canned since I was out of fresh and they worked fine.)  Place mushrooms on top of chicken, then cut bacon in half and place on top of mushrooms.  Top with cheese and bake for 30 minutes or until chicken is cooked through.  Serve with honey mustard dipping sauce.

Alice Springs Chicken 
4-6 boneless skinless chicken breasts
seasonings of your choice/taste
4-6 strips of bacon
1 cup mushrooms
1 cup cheese

Honey Mustard Dipping Sauce
1/2 cup mustard
1/4 cup light karo syrup
1/4 cup honey
1/4 cup mayo
Mix in small bowl and serve.

Sweet and Sour Meatballs


I found yet another "keeper" and thought I'd pass it on...
Sweet and Sour Meatballs

Serves 4-6
1 1/2 pounds lean ground beef (make sure it's REALLY lean, I use elk meat, and it works great)
3/4 cup quick oats
2 eggs, slightly beaten
1/2 cup finely chopped onion
1/2 cup milk1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce

Combine all of the ingredients and mix well. Form into about 12 balls, each about 2 inches in diameter. Place in a casserole dish. Cover with sauce (below). Bake at 350 degrees for about 30 minutes. Serve over rice.

Sauce:
1/2 cup brown sugar
1/4 cup apple cider vinegar
1 teaspoon mustard
1/4 cup barbecue sauce
1 teaspoon Worcestershire sauce

Combine ingredients and blend thoroughly. Heat in a small saucepan until combined and sugar is dissolved and pour over meatballs. (This dish is not overly abundant on sauce so if you enjoy things a bit saucier, double the sauce ingredients. ***I actually triple it, but save about a third to pour on meatballs when there is about three minutes left of cooking time. This way the sauce doesn't get hot enough to caramelize into the yummy stuff that coats the meatball, leaving it a tad bit runny to pour on our rice!)

Chick Parmesan

I found this recipe in one of my brother's cook books. It is so delicious and fairly easy to do, so I thought I would share. It's also pretty healthy.

You will need:
2 chicken breast
2 tsp oil
1.5 C of pasta sauce
.5 C mozzarella cheese
2 Tb Parmesan cheese

Brown chicken in oil over medium heat. Add sauce inn bring to a boil. Reduce heat and cover for 10-15 minutes. Sprinkle with cheese and broil in the oven for 3 minutes.

I put this over the top of some spaghetti squash and I loved it. I am a huge pasta fan, so I am glad that I found a healthy alternative.

To cook a spaghetti squash in the oven, cut in length wise. Scoop out the insides. Place some water in it. Wrap it in tin foil and bake at 350 for until soft.

Easy Oven Lasagna


I love this recipe because it is quick and easy and then just bake.

1lb hamburger
1/2 C water
48 oz spagetti sauce
6 lasagna noodles uncooked
16 oz container cottage cheese
10 oz mozzarella (or other) grated cheese
1/4 C parmesean cheese


Brown hamburger, add spagetti sauce and water. In another bowl mix cheeses together. Layer 1/2 noodles, 1/2 meat, 1/2 cheese, in 9x13 dish cover with foil, bake in oven @ 375 for 1 hour.

Turkey or Chicken Casserole

Turkey or Chicken Casserole

6oz Stove top stuffing
1 can of cream of chicken soup
1 C sour cream
2 to 3 cups of chicken or turkey

Mix stuffing according to package directions and cook.
Mix soup and sour cream in bowl.
In a 9 by 9 dish put 1/2 of the stuffing
Then add all of the chicken
Put sauce mix on top of Chicken
Finish off by adding the last of the stuffing
Put in oven at 350 for 25-30 minutes
Eat and enjoy!

Ranch Breaded Baked Chicken


I just made it. So the amounts are guesstimated.


4 boneless chicken Brsts

Garlic salt to your families taste

Salt and pepper to your families taste

Dry ranch mix about 1 Tbs

2 eggs

Crushed red pepper or cayenne *optional* for a little heat

5 slices white bread (crumbed in food processor)


Mix chicken and eggs with all seasonings. Coat with bread crumbs. Bake for 35-45 Min @ 400 turn over half way to toast the bottom side of chicken.

Stuffed Pizza Rolls


My friend gave me this recipe and they are so easy, but so good.


Stuffed Pizza Rolls

1 roll refrigerated pizza dough
marinara/pizza sauce
2 T grated Parmesan cheese
1 T olive oil or melted butter
1/2 t garlic powder
1 t dried Italian seasoning
mozzerella cheese
Pizza toppings of your choice

Preheat oven to heat specified on pizza dough package. Usually it's 400 degrees.

Unroll your pizza dough onto a lightly floured surface. Cut the dough into little squares. I think I got about 20 squares from my dough. Cut any size you want.

Place cheese and desired toppings on each square. (Note that you're not putting the marinara sauce on the dough- it's for dipping after)

When all of your dough squares have cheese and toppings on them, carefully lift up each square and wrap the dough around the toppings. Pinch to make sure each ball is sealed shut and then place them seam side down in a lightly sprayed pie pan (or similar sized dish).

Brush the tops of the dough balls with olive oil or melted butter and then sprinkle with the garlic and Italian seasoning and top with Parmesan cheese.

Cook them in the oven for about 15-20 minutes or until golden brown on top.

Serve warm with warmed marinara sauce on the side for dipping.

Puerco y Papa (Pig & Potato) Cheese Chowder

3 medium russet potatoes, diced
2 tablespoons butter
1 teaspoon each garlic and onion powder
salt and pepper
3 cups water
2 cups whole milk, 1/2 and 1/2 or cream
3 cups shredded mexican cheese blend
6 slices cooked bacon cut into 1/2 inch strips
3 slices cooked dinner ham, chopped
1 small can diced green chilis

In a large pot (nonstick) melt butter and add potatoes. If you want to use raw bacon, cook it in the pot, leave about 2 tablespoons of the grease in the pot and omit the butter. Add salt and pepper, onion and garlic powder and cook potatoes in butter or bacon grease for about 10 minutes, stirring occasionally. Add water and boil until potatoes are almost done. Lower heat to medium and stir in milk and add cheese. Stir until cheese is melted and then add cooked bacon and ham (I used spiral sliced ham I had frozen after Christmas). Add green chilis and cook until meat is heated through.

Sweet and Sour Pork

1 lb Pork
1 Carrot
2 Green Pepper (bell)
6 Tbs Cornstarch
1 C pineapple

"A"
1/2 tsp Garlic Salt
1 egg yolk
1 Tbs Soy Sauce
1 Tbs Cornstarch
1/2 tsp Sugar

"B"
3 Tbs Sugar
3 Tbs Vinegar
3 Tbs Ketchup
4 Tbs Water
2 1/2 tsp Cornstarch
Cut pork into cubes. Mix "A" ingredients together and marinate pork for one hour. Remove and coat with 6 tbs cornstarch. Deep fry until done. Mix "B" ingredients together and set aside. Chop carrot and pepper (I added a little bit of diced onion) into chunks. In 2 Tbs oil, stir fry veggies, until tender, add pineapple. Stir in "B" and cook until thick. Turn off heat and add to meat.


Serve with rice or egg rolls.

This recipe has a little more prep time, and sounds difficult. But it is really easy and GOOD!

30 Min Chicken

This is actually really good for the amount of work! A quick & super easy dinner!
4 boneless skinless chicken breasts
2- 12 oz can of sprite (not 7up)
1- 18 oz bottle BBQ sauce

In electric frying pan, place chicken. Add BBQ and sprite covered, at 350 for 3o min (hence the name 30 min chicken). Serve over rice with extra sauce.

Honey Baked Chicken

4 Legs
4 Thighs
1/4 C butter
Salt
Pepper
Garlic (salt or cloves)
1/4 C Honey
Potatoes Quartered
Onion (optional)
Carrots (optional)

In baking pan, chicken and potatoes, pour butter over, season to your tastes. Bake for 40 min @400. Then baste Chicken with the honey and juices from pan a few times for 20 more min. Or until potatoes and chicken is done.
